Carnaroli Risotto Rice

Carnaroli is extremely difficult to harvest as it grows nearly twice as tall as both Arborio and Vialone Nano rice. In fact, it must be harvested as soon as it matures, before the large grain falls over from its own weight! The large, long grain also makes it an exceptional choice for rice salad.
