Sardinian Fregola

Not a grain as some people believe, fregola is an ancient form of pasta made from semolina, and also a staple of the Sardinian kitchen. Fregola can be served in seafood soups, layered with tomato sauce and grated Pecorino, and in any other way that one typically uses pasta.
