Fresh Black French Truffles

The winter truffle, also known as the Perigord Truffle, is available from the middle of November through March. Like all truffles, these can be found as far as 20 inches underground. Although not nearly as potent as the heralded white truffle, the aroma is still strong enough that it is detected by the specially trained dogs who reveal the location to the truffle hunter.
